We do things a little differently here. Our truffière is not subjected to chemicals, pesticides, or herbicides - ever. Just hard work, muddy boots, muddier hands, and a whole lot of time spent on the ground (often quite literally). It’s definitely not the easiest path, but we firmly believe that low intervention and adhering to organic principles is the best approach.

Gippsland is home to some of the most fertile soils in the country. Our little slice of Gippsland where the Strezlecki ranges start rising is known locally as ‘Blue Gum Soil’ and it is something else again when it comes to this soil fertility. And the rainfall… oh the rainfall, it’s something to behold.. And the frosts, you’re getting the picture! This potent combination of nature provides the foundation to pursue a low intervention approach to growing our Truffles, our yields might not be as high as some, but we feel the payback comes in quality, not to mention a more honest representation of the Truffles origin.

To us, great truffles are made possible by the environment we provide for them underground. What you put into/onto the land (or more importantly what you don’t) will have a profound impact on what the land gives you back. We believe our truffles reflect that philosophy: honest, expressive and a true product of their environment (with a little love and care thrown in for good measure).
